Broccoli Salad

This was a simply delicious and easy salad. As most of you know I go to the Farmers Market on Saturday mornings and stock up for the week. The broccoli was looking especially yummy so brought some home and looked through my cookbooks until I found this recipe. It is definitely a keeper. The recipe is in the Creme de Colorado cookbook. This one was published in 1987. The books are written by the Junior League of Denver. They are always coming out with a new one and I of course have several.

The recipe is so versatile. Next time I'm putting in roasted almonds.
Surprising Broccoli Salad (from the Creme de Colorado cookbook)
3 cups broccoli flowerets
6 slices bacon, fried crisp, drained and crumbled
1 cup chopped red onion
1/2 cup shredded cheddar cheese
Dressing
1 cup mayonnaise
2 T white vinegar
1/3 sup sugar
Cut flowerets off broccoli stalks. Toss together broccoli flowerets, bacon, onion and cheese. Combine dressing ingredients and mix well. Pour dressing over salad and toss thoroughly. Cover and refrigerate until ready to serve.
Quick, easy and delicious. Salad will keep several days refrigerated in a tightly sealed container.

I LUV brocoli salad! Your recipe is very similar to mine -- I need to add shredded cheddar -- that would be a great addition!

Hello Judy,
I made this recipe for my family, because my daughter tried it at her second grade teacher's house and just loved it. She asked her teacher for the recipe and brought it home to me. I made it and my hubby and kids couldn't get enough!!!!!!
Thank you for reminding me to make it this weekend! I just bought broccoli yesterday too!

I have that cookbook Judy, but haven't used it much. I do use the cache la poudre cookbook a lot though! I've had a version of that broccoli salad and love it!

That is one of my summer favorite recipes...I tweak it just a bit...no onions(upset my tummy) and no sugar!!! Still very good.

Oh I love this salad ! I have the same recipe, except instead of cheese mine calls for raisins or dried cranberries . Try it , it is delish . Every time I take it some where everybody wants the recipe.

Oh my salad looks and so does the recipe! We have grown brocolli this summer and its growing quite well...we need to try this recipe. The recipe book sounds very good too!thank you for sharing

Yes, I have eaten that Broccoli salad, and it IS TOO GOOD!! I love salads...we used to have Salad luncheons hosted by different ladies groups in my hometown. Every kind of salad imaginable was there--it was fun!
