Artichokes

I've been doing a lot of baby artichoke lately and I think I'm getting it!! Finally!! I've used this recipe several times now and they are getting better, just not perfect yet.
I wasn't taking off enough of the outer leaves at first and now I boil and roast them longer than the recipe calls for.

Roasted Baby Artichokes
16-24 baby artichokes
1 lemon sliced
1/2 cup olive oil
salt/pepper
After cleaning, taking off all the outer leaves cut them in half and drop in boiling salted water for 5 minutes along with the lemon slices. Drain well and toss artichokes and lemon slices with olive oil, salt and pepper. Arrange in a single layer in a roasting pan or baking sheet. Roast in 450 oven until tender 8-10 minutes.
Today I am using this recipe from Molly. She posted her recipe on October 6. I think I like the addition of garlic but I like roasting them the best so after they simmer I am putting them in the oven for a few minutes. Do you ever cook baby artichokes? If so how? I'm still looking for that perfect recipe.

It looks delicious. I love vegetables far more than meat. But I've never cooked artichokes.

I will have to say that I have never roasted an artichoke! I have bought them in jars long, long ago. I guess I am not too adventuresome but lead the way! I may try it yet!

Never tried cooking artichokes, but I love the taste I make a mean dip with pickled artichokes.Some day I may try this vegetable.!Yours looks good!

I love the ABC post:) and good for you cooking artichokes...I like them chopped up and in a spinach dip that I make..otherwise I leave them alone.

Hi Judy, That was really spooky, I was just thinking about you then as it seems awhile since I came by and there was a comment from you (do do do do do do do do)thats meant to be the Twilight Zone music! I have never tried an artichoke, I think ive always been abit scared of them. I think its the hairy thing. Id probably leave it in and end up choking. I dont want to be remembered for choking on a wig! Or is that the jerusalem ones?? I think I should try your recipe. By the way Im still being grumpy! LOL! X
