Ginger Chicken with Peaches and Onion

I think I got this recipe from Martha but I'm not sure. I've had it for awhile and dug it out again. It is something a little different and so delicious.

I just sauteed zucchini and made brown rice to go with it. Pretty simple but it looks like something special. I didn't do too much with the zucchini or rice because the chicken had so much stuff in it.

GINGER CHICKEN WITH PEACHES AND ONION

(adapted from Martha Stewart I think)

1 bag (1 lb) frozen peaches, unthawed

2 red onions, halved and sliced 1/4" thick

salt/pepper

2 T grated fresh ginger
2 T soy sauce
1 T vegetable oil
1 T toasted sesame oil
1/2 tsp red pepper flakes
4 bone-in skin-on chicken breast halves

Preheat oven to 425. Place peaches and onions on a large rimmed cookie sheet; season with salt/pepper. Mix together the ginger, soy sauce, vegetable oil, sesame oil, and red pepper flakes; toss with the peaches and onions.
Season chicken with salt/pepper and arrange them skin up in the peaches and onions. I kind of roll mine around to get some of the sauce on them.
Roast about 30-40 minutes depending on how big your breasts are. Mine were pretty good size so I cooked mine about 40 minutes.
